Paleo Swedish Meatballs {Whole30}

So this was a spur of the moment, I need to do something with my veal and ground beef in the fridge kind of meal. Turned out pretty tasty! I need some kind of side to go with it next time. We made these and ran out the door for some plans so I missed taking a final photos.

What You Need

For the Meatballs:

  • 1lb Ground Beef
  • 1lb Ground Veal (sub pork if you’re not cool with veal)
  • 2 eggs yolks
  • 1 Tablespoon of Parsley
  • 1 teaspoon of Sea Salt
  • 1 teaspoon of Black Pepper
  • 1/4 teaspoon of Cinnamon
  • 1/4 teaspoon of Nutmeg
  • 1/8 teaspoon of Ground Cloves
  • 1/4 Sweet Onion, finely minced
  • 1 Garlic Glove, finely minced

For the Sauce:

  • ¼ Sweet Onion, finely minced
  • 1 Garlic Clove, finely minced
  • 1 14 oz Can of Full-Fat Coconut Milk
  • 2 cups of Beef Broth
  • 2 Tablespoons of Clarified Butter (or Ghee)
  • 1 teaspoon of Black Pepper
  • 3 Tablespoons of Tapioca Flour
  • Salt to taste

What To Do:

  1. 0220161912Combine the beef, pork, egg yolks, parsley, salt, pepper, cinnamon, nutmeg, and cloves in a bowl.
  2. Heat a skillet to medium and add ½ Tablespoon of lard/cooking fat.
  3. Add the minced onion and garlic and stir-fry for a minute. Add to the meat bowl.
  4. Mix the contents of the bowl until well blended.
  5. Form about 2 Tablespoons worth into a ball.
  6. Heat a cast iron skillet to medium and add the rest of the lard/cooking fat.
  7. Add about ten balls to the skillet and cook for about 8-10 minutes, continuously rotating each ball, until they are nice and browned.
  8. Remove the balls and place on a paper towel to drain. Repeat cooking the balls in a few more batches.
  9. Add the onion and garlic to the skillet and cook for about a minute.0220161912a
  10. Create a roux with the butter and tapioca flour. Make sure butter is liquid and add the flour.  Whisk for about 30 second, until flour is completely absorbed by the butter.
  11. Add the coconut milk, broth, and pepper.
  12. Whisk and continue to cook for about 5 minutes until thick.
  13. Taste and add salt if desired.
  14. Remove from heat and return the meatballs to the sauce.
  15. Serve warm!
