Crockpot Meal Prep

Since it’s super hot out, I had to plan for crockpot meals this week.  Our 3rd floor apartment stays super hot and once I’m home, I just don’t feel like cooking a full meal.  The crockpot will at least get most of it done for me and save some heat.  There is some non-crockpot cooking included .

Meals are for 2 with maybe some leftovers.  Here is the plan for this week:

Apricot Chicken with Green Beans

  • 2 Chicken Breasts
  • Salt & Pepper to taste
  • 1/2 onion, sliced
  • Sauce:
    • 1/2 jar apricot preserves
    • 1/2 cup chicken broth
    • 1 tbsp dijon mustard
    • 2 cloves garlic
  1. Place Chicken in Crockpot. Salt & Pepper to taste.
  2. Pour onions over chicken.
  3. Pour sauce over chicken.
  4. Cook on high for 3-4 hours.
  5. Serve with green beans.

Creamy Ranch Pork with Asparagus and Mashed Potatoes

  • 1 lb Pork Loin or chops
  • Pepper, to taste
  • Sauce:
    • 1 can cream of onion soup
    • 1 packet ranch
  1. Place pork loin into crockpot.
  2. Pepper to taste (salt not suggested due to ranch and soup)
  3. Pour sauce over.
  4. Cook on low for 6-8 hours.
  5. Serve with Asparagus cooked to your preference and mashed potatoes

Sesame Chicken and Rice

  • 1lb chicken thighs
  • Sauce
    • 1/2 cup Honey
    • 1/4 cup soy sauce
    • 1/2 tsp sesame oil
    • 1 clove minced garlic
    • 1 tbsp miced onion (dried)
    • 1/4 tsp crushed red pepper
  • 1 tbsp cold water
  • 1 tbsp corn starch
  • Sesame Seeds
  • Green Onions
  1. Cut up chicken thighs into bit size pieces. Place into crockpot.
  2. Pour sauce over chicken.
  3. Cook on low 3-4 hours, until chicken is almost done.
  4. Mix together cornstarch and water. Pour into crockpot.  Cook on low 1 more hour. Sauce will thicken.
  5. Serve over rice. Top with sesame seeds and green onion.

Korean Beef

  • 1lb stew beef
  • Sauce:
    • 1/4 cup brown sugar, packed
    • 1/4 cup reduced sodium soy sauce
    • 2 teaspoons sesame oil
    • 1/2 teaspoon crushed red-pepper flakes, or more to taste
    • 1/4 teaspoon ground ginger or 1 tbsp fresh ginger paste
    • 3 cloves garlic, minced
  • Green Onions
  • Sesame Seeds
  1. Place beef in crockpot.
  2. Pour sauce over.
  3. Cook on low for 6-8 hours.
  4. Serve over rice topped with green onion and sesame seeds.

(This is based off the Damn Delicious recipe for Korean Beef Bowl . This is my alternative to make in the crockpot and because stew beef was on sale last week.)

Green Chicken Enchiladas

  • 1 lb chicken thighs
  • Sauce:
    • 1-4oz can green chilis, juice included
    • 1/2 cup chicken broth
    • 1 tsp cumin
    • 1 tsp chili powder
    • 1 tsp salt
    • 1 tsp pepper
  • 4 oz cream cheese
  • 1/4 cup sliced yellow onion
  • 8-10 Corn Tortillas, Small Size
  • 1 Can Enchilada Verde Sauce
  • 4 oz shredded mexican cheese
  1. Place chicken in crockpot.
  2. Pour sauce over chicken.
  3. Place block of cream cheese and sliced onion in crockpot.
  4. Cook on low 6-8 hours, stirring occasionally to blend in cream cheese.
  5. Preheat oven to 350. Grease pan.
  6. Shred chicken in crockpot.
  7. Spoon chicken mixture into tortillas. Roll up and place in pan. Repeat until all mixture is used.
  8. Top with enchilada sauce. Sprinkle cheese on top.
  9.  Bake for 40 minutes in preheated oven. Let sit for 10 minutes before serving.
